Broiled Asparagus & Steak Salad with Hoisin Vinaigrette

Oh my Lordy.  This salad was outstanding.  I’m done.  There’s no reason to continue this entire week making salads…because no salad will compare.  I’m kidding!  Not about how amazing this salad is, but of course I am not done yet.  I promised ya’ll a week of Meal Deal Salads and I plan to deliver.  I won’t fail you!

This salad was somewhat of a challenge — for me.  For ya’ll it will be easy because I have already perfected it for you!  This recipe was inspired by one I liked in a magazine, but it called for a Hoisin vinaigrette.  I tell people all the time how easy it is to live a Paleo lifestyle.  When it comes to finding satiation in varieties of meat, vegetables, fats, and spices it can be easy; however, condiments are another story.  We try to stick to real foods only, so things that can be bought typically bottled and ready to go aren’t always the cleanest options.  You can find some.  For instance, hot sauce is an easier one to find clean.  As long as it’s vinegar based and simply has chiles and spices added that is perfectly fine.  Hoisin sauce on the other hand is full of junk.  You wouldn’t believe the long ingredient lists I came across when scoping out the options at my grocery store.  With a hoisin vinaigrette being the factor that gives this salad its flare I had to come up with something.

I did some research online to figure out what is characteristic of hoisin sauce.  Once I found out what the basic flavor notes were in such a sauce I was at work in my kitchen.  I needed a vinaigrette that would be spicy, sweet, and somewhat nutty at the same time.  Well, I will tell you…I have never had hoisin sauce — but whatever this sauce was — I loved it!

I was lucky enough to not only cook for Jason tonight, but Kyle was over as every other Tuesday.  Both men gave me some great feedback!  This salad is a true winner.  If you are a huge fan of hoisin sauce and my sauce doesn’t compare; I’m sorry!  At any rate, I think this vinaigrette is worth trying.

I will add that I had to change my title to “Broiled” instead of “Grilled” as it was originally.  We have had lots of rain today so grilling just wasn’t in the cards.  Instead of grilling I depended on my trusty broiler.  Your broiler can handle the steak and asparagus beautifully when the weather is not on your side.

  1. Rub 1 tbsp. of olive oil over your steak.  Season both sides of steak with salt, pepper, coriander, and fennel.  Let steak sit to gather flavor and come to room temperature before cooking, about 30 minutes to an hour.
  2. Meanwhile, prepare your vinaigrette by combining all ingredients in your blender or food processor.  Feel free to simply whisk them together but they won’t emulsify as well.
  3. Place steak under broiler for 10 minutes total, flipping after 5 minutes.  Remove from oven and tent with foil.  Allow steak to set while you prepare asparagus.
  4. Toss asparagus spears on a sheet pan with the remaining tbsp of olive oil.  Salt and pepper to your liking.  Broil spears for 8 minutes total – tossing after 4 minutes.
  5. Assemble salads by plating arugula, asparagus, red onion, mango, and steak that has been thinly sliced.  Drizzle salad generously with hoisin vinaigrette.Hope you enjoy this salad as much as we did.  I will definitely make it again.  It’s nice to know that you can come across recipes you really want to try and make them suit your dietary needs.  Keep it as real as possible people!
