Turnip, Asparagus & Mushroom Hash

Can you honestly say that you get enough vegetables?  If you eat a vegetable at dinner, even if it’s a wide variety…that’s not enough.  You say you love vegetables and you can name off all the ones that you enjoy…but do you really eat them enough?  There’s a strong chance that this is not the case.  In order to get enough of them in it helps to eat them at breakfast as well as snacking and other meals.  I used to be against eating vegetables in the morning; I don’t know what it was but they just didn’t appeal to me that early.  I was up for eggs, up for fruit, up for healthy doses of fat…but veggies in the morning just didn’t sit well with me.  Then I became a grown up, and realized that sometimes what you want isn’t always good for you.  Buck up, and eat vegetables in the morning.  They’re delicious with eggs.  You can scramble ’em in or make an omelet.  Whatever you prefer.  Here’s a quick idea for you that I made this morning.  Realize that you can use whatever veggies you have on hand here — that’s why I made this because I was trying to get rid of stuff.  I do believe that if you top anything with a fried egg it will taste good.  That is actual fact.



  • 2 medium sized turnips, peeled and diced
  • 1/2 red onion, chopped
  • 1 bunch of asparagus, thicker part of stems removed and chopped in 1″ pieces
  • 1 c. sliced mushrooms
  • 1 roasted bell pepper, chopped
  • 2 tbsp. coconut oil
  • 1 tsp. rubbed sage
  • 1 tsp. dried rosemary
  • 1/2 tsp. garlic powder
  • salt and pepper to taste



  1. Heat 1 tbsp. of coconut oil in a skillet over medium heat.
  2. Add chopped onion and let cook down for a bit, a minute or two.
  3. Add turnips, stir, and cover.  Let cook for about 8 minutes, you’re wanting to give them a head-start.
  4. Check turnips for softness, if they are almost there go ahead and add all of your spices.  If not, put the lid back on for a few more.
  5. Add additional tbsp of coconut oil.  Include asparagus, mushrooms, and red pepper.  Stir to combine and put cover back on.
  6. Let entire mixture cook together for 5 minutes or so, or until asparagus is crisp tender.
  7. Enjoy with a side of bacon and some fried eggs on top.
