Fried Eggs over Green Chile Buffalo Burgers

Okay – I couldn’t even fit this entire line of excitement in the post title.

This dish has a lot of hands-down amazing things going on.  Let me take a big breath so I can finally say it all at once…..

Alright, so we are talking about organic & grassfed ground buffalo spiced with green chiles, formed into big fat patties and broiled…topped with completely Paleo approved fried green heirloom tomatoes…which are then topped with a fried egg – runny yolky goodness and all it’s glory.  As if it couldn’t get any better…hahaha…oh, it does.  On the side of our buffalo, tomato, egg tower we have another wonderfully fried friend – Mr. Bacon, my secret lover that Jason doesn’t know about.  I’m kidding; he totally knows.  On the other side of the tower we don’t have anything fried, but it doesn’t need to be fried to make friends…it’s Ms. Avocado.  Good Lord, Mr. Bacon and Ms. Avocado got married on my plate tonight, then honeymooned on Runny Egg Yolk Island and became Mr. & Mrs. Bad Ass Dinner.

See?  How was I supposed to fit all of that on my post title?  It was amazing enough that I had to illustrate that scenario and make everyone uncomfortable.  Sorry about that last part, but I’m not sorry for making this dish!  If you never listen to me – listen to me now and make this one!


Ingredients for Burgers

  • 1 lb grassfed ground bison (ground beef will work too)
  • 1/4 c. onion, finely chopped
  • 1/2 c. cilantro, finely chopped
  • 1 small can of green chiles (read ingredient label, damn you!)
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 tsp. sea salt
  • 4 fried eggs (one for each patty)
  • Avocado and bacon for the side if you’re in a relationship with them like me



  1. What do you think?  You mix everything together in a big bowl!

  2. Form into four patties.
  3. Broil 5 minutes on each side, tent with foil and let rest for 10 minutes.
  4. While patties rest, fry your eggs.
  5. Top each patty with an egg.

**This of course is one version.  You can simply eat these burgers with a fried egg, bacon and avocado.  Trust me, that all by itself would be really good.  But I had to take it one step further.  Paleo Fried Green Tomatoes.  Let’s get you the recipe for THAT so you can experience what I went through tonight.  I’m twitterpated, really.



Ingredients for Fried Green Tomatoes

  • 2 heirloom tomatoes, you want them to be a bit firmer and the green variaties will get you there
  • 1.5 c. almond flour
  • 1.5 tsp. black pepper
  • 1/2 tsp. sea salt
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 2 eggs
  • few tbsp. of your favorite fat; I used the bacon grease from the strips I made for the burgers along with another spoonful of it from a nifty jar I keep full of bacon fat.  As you know I make a lot of bacon, and I do save the grease for occasions like this one, or when my lips are chapped, or to put on cuts, as a shaving cream, or as a face mask.  haha!  I’m totally kidding about those last few, but sometimes I do open up the jar and smell it just for no reason other than that it smells kinda sweet and that’s me!



  1. Slice your tomatoes up – you want them to be about 1/4″ thick.
  2. Combine all dry ingredients together in a shallow bowl and mix well.

    All dry ingredients mixed and ready for those tomatoes!

  3. Beat eggs in a separate bowl.
  4. Place tomato slices, one at a time, in egg and then dry mixture.  Turn a few times to coat well.
  5. Shake any excess flour off, and collect on a plate until ready for frying!
  6. Heat fat in large skillet over medium high heat.
  7. Add a few slices at a time, don’t overcrowd, and cook for 4 minutes per side.
  8. Transfer finished tomato slices to a cooling rack that has been fitted onto a sheet pan.
  9. I kept my pan in the oven at about 250 degrees, not to cook them further but to keep them warm while the others were frying.
