Shaved Asparagus Salad

This is a very interesting salad.  I am a huge fan of tossing fruit in salads because that’s typically the only way I eat it.  In addition to fruit, I am known for tossing nuts and bacon in salads all the time…but asparagus?  Well, hell yeah!  Let’s just take one of our favorite sides, and “toss” it in with another one of our favorite sides and be pumped up about it!  It was amazing and won’t bore you like some other salads might.


  • 1 bundle asparagus, usually 10-15 spears
  • 6 oz arugula
  • 2 medium sized oranges
  • 2 slices of uncured bacon
  • 1 medium sized shallot, minced
  • 1 tbsp. red wine vinegar
  • 1 tbsp. extra-virgin olive oil
  • salt and pepper to taste


  1. Cut tough end of stems off asparagus.  Shave asparagus with a vegetable peeler so that you get thin ribbons.  Yes, shave them!  I suppose you could chop them up too, but the ribbons are so fun!
  2. Chop bacon and cook in a large skillet over medium heat.  Once crispy, remove from pan and let the drippings remain.
  3. Add shallot and asparagus ribbons to hot skillet.  Toss to coat and cook for about 5 minutes or until the asparagus is crisp tender and shallots are translucent; remove from heat as soon at it’s done.
  4. Put arugula in a large bowl.
  5. Cut one orange into segments and add to arugula.
  6. Squeeze the juice from your second orange all over the arugula.  What to do with the squeezed orange?  I don’t know; I give mine to Jason usually and he sucks on it.  You’re on your own if you don’t have a Jason.
  7. Add red wine vinegar and olive oil – toss well.
  8. Now add your asparagus along with shallots and crispy bacon.
  9. Enjoy!

Another cool thing about hearty salads like this one, is that you can quickly add some meat to it and be done.  Maybe some leftover chicken from another dinner, or even chopped up shrimp would be good in this one.  Salads are not just sides, but entrees too!
