21DSD Cookbook — Fennel & Bacon Sweet Potato Salad

What a long title…but I must give credit where credit is due!  It’s recipe review time again — I planned my weekly menu full of dishes featured in the new 21 Day Sugar Detox Cookbook.  This potato salad has my heart, truly.  I absolutely fell in love with it — and figured I’d share the love with you nice folks.

Did you read that correctly?  A 21DSD with sweet potatoes?  Why, yes!  If you live an active lifestyle — nutrient dense carbs like sweet potatoes are encouraged.  Watching your sugar intake doesn’t mean you have to give everything up.  Have you considered trying your very own 21DSD?  You won’t regret it; give it a go already!  ….and then make this awesome salad.  🙂

  • 4 medium sweet potatoes, peeled & cut into 1-inch cubes
  • 6 slices bacon
  • 1/2 medium red onion, diced
  • 2 green onions, sliced
  • 1/2 cup fennel bulb, thinly sliced
  • 3/4 cup mayonnaise (try a homemade version w/o nasty refined oils)
  • 1 tbsp. apple cider vinegar
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper



  1. Place the sweet potatoes in a large stock pot and cover with water.  Bring to a boil and cook for about 10 minutes or until they are fork-tender.  Drain potatoes and allow them to cool slightly.
  2. Cook the bacon in a skillet over medium heat and allow the strips to drain on paper towels.  Chop the bacon up once it is cool enough to handle.
  3. In a large bowl combine bacon, red onion, green onion, fennel, and sweet potatoes.
  4. In a smaller bowl whisk together the mayonnaise, apple cider vinegar, sea salt, and black pepper.
  5. Pour the mayo mixture into the larger bowl and very carefully fold ingredients together — be gentle with your potatoes as they are soft.
  6. Serve warm or chill for later.  Yes, warm and chilled are both fantastic!!

I served this potato salad with two beautiful T-bone steaks, but obviously any slab of meat would have to compete with this hearty side dish.  Ribs or brisket would also make great companions.
