Robbed, Moved & Back on Track!

I hate to bring it up again — such a bad thing!  After our whole ordeal Jason and I… well, basically sulked for a bit and didn’t cook at all.  Our vacation was just about to start and we did just that.  We went back to our home town, spent time with family, and just laid back for a few days.  My mom threw a Hawaiian themed party and we lived it up!  I couldn’t help but cook a few things for the party — let me tell you, these Bacon Meatballs with Mango Honey Mustard Sauce were a huge hit!!

So let us fast-forward — after a dozen cheesecake slices later — and here we are!  Ready to be ourselves again!  Vacations are nice.  I don’t hold back.  I wanted my entire week to be fun-filled and I didn’t want to stress about what I ate even a little bit.  Luckily, I don’t suffer from any severe food allergies or yucky reasons to not eat gluten, etc.  I choose to limit such things because of the health benefit it provides, not because I HAVE to.  With that said I can slip from time to time…but I always find my way back home.  Speaking of home…we are in a brand new one.  After all the drama and labor of moving/unpacking my kitchen is clear and I am more than ready to enjoy REAL food again.  Bring it on!

As far as work is concerned — vacation has ended and I am working 6 days out of the week!  Good grief.  With only one day off I’m keepin’ it simple.  Lots of leftovers, salads, and quick meals.

As always I will link to recipes where it’s possible.  Others are just throw-together things I like to make.

Weekly Menu for July 12-19 


Friday:  Bacon & BBQ Burger Salad

Saturday:  Smoked Paprika Chicken Thighs with a cabbage, cucumber, and mango salad

Sunday:  Tuna Bacon Cakes with sautéed spinach

Monday:  Wild Salmon Salad

Tuesday:  Smokey Oven-Baked Ribs with Fennel & Carrot Slaw — from Gather

Wednesday:  leftovers

Thursday:  Applegate uncured hotdogs with Brussels sprouts

Friday:  Apple & Apricot Pork Chops — from Paleo Comfort Foods

    Wow that’s intense! Yall did the best thing just to move. Keep up with the recipes and quick meals my fiance and I our trying to figure what to do. I rather have him to eat a healthy quick meal instead of something gross for his body and mine too.
