Watermelon with Mint & Lime

Sometimes the best desserts are the simple ones.  I don’t know about ya’ll, but when I look at recipes I check out the ingredient list first and if I feel overwhelmed…I usually move on.  That’s what is so nice about simple fruit-based sweets!  Not much to them, and they’re perfect to escape the heat outside. 

This little trio will make a great addition to a BBQ you attend, or just a refreshing snack to have outside while you work in the yard.  Whatever reason — you can’t go wrong with these flavors!

The following amounts will serve 2-3 people; however, the recipe can easily be multiplied.



  • 3 c. watermelon, cubed
  • 1/2 lime, juiced
  • 1 tbsp. fresh mint, finely chopped
  • pinch of salt



  1. In a mixing bowl toss the watermelon with lime juice, salt, and mint.
  2. The flavors really come together if you let it sit covered in the fridge for a while, but you can serve it immediately as well.
  3. Enjoy!

You can try some other tropical fruit with this same method — maybe cantaloupe or honeydew!
