Whole30 Day “I freakin’ Lost Count”

ha ha ha…where the hell have I been?  I have to be the worst Whole30 blogger on the face of the planet.  Luckily I have taken a few snapshots of things I have eaten along the way…so I’m not too lost.  I do know that currently I am on day 22.  Another thing I know for certain — is that not once have we failed to be in compliance with the Whole30 program.

So what have I been so pre-occupied with?  Work, sleep, and cooking.  Basically if I am not at work — I am sleeping, cooking, working out, or watching Mad Men.  I have not had ANY more free time than that.  Blogging had to be last on my priority list.  Work has remained crazy — and we are still working through only have one day off a week so I am doing my best to basically do it all.

Today being my day off this week I get to spend a bit of time posting about what I’ve been eating lately, but I also got to go grocery shopping, did some laundry, and here in a few I’m going to the park for a run.  Days off from work aren’t usually days off from working out, unfortunately.  I’d really like to do absolutely nothing, but that’s not really me.

Okay so let’s back-track just a bit.

Day 18 – eggs, bacon, and fermented beets for breakfast.  For lunch at work I ate a salad that was topped with lamb (seasoned with oregano), cucumbers, tomatoes, and an avocado dressing (avocado, cucumber, spices, olive oil, lemon juice).  For dinner, very late at night when I got home I ate an apple with some almond butter and went to bed.

Day 19 – eggs, bacon, and raw kraut in the morning.  Lunch at work was a salad of spinach and kale with strips of steak, red onion, cucumbers, carrots, and olive oil with balsamic vinegar.  For dinner, very late once again…was some steak Jason had made and some roasted sweet potatoes.

Day 20 – eggs, bacon, and fermented beets in the morning.  For a meal at work I ate a recipe from Practical Paleo — Chorizo Meatballs on top of some Mashed Faux-Tatoes (mashed cauliflower).  It was extremely good, and of course super easy to whip up before work. When I got home, yet another late night…I had some london broil and some roasted sweet potatoes.

Day 21– eggs, bacon, and raw kraut in the morning.  At work I had some tuna salad — tuna, red onion, bacon, avocado, cucumber, and some lemon juice on a bed of greens.  It was a late night at work so I ordered my crew some pizza…but I ate tuna.  hah.  It’s actually very easy to do.  I imagine what my stomach would feel like if I ate pizza, and it pretty much is all I need to not want it.  When I got home — more eggs and bacon and then an apple with some cinnamon and almond butter.

Running totally ragged and eating lots of good food.  That about sums it up. …now I’ve gotta go run.
