Whole 30 Days 3 & 4

I will tell you right now…days 3 and 4…total bore fest.  I have been working a lot lately and we’re waiting on a real trip to the grocery store so most of what I have eaten has been extremely simple.  That’s not a bad thing; though, as everything has been super nutrient dense and satisfying.

Breakfast for Days 3 and 4 were pretty different from each other.  One super quick and the other took a little more effort, but not much!

3 strips bacon, 2 fried eggs with hot sauce and a banana

Today (Day 4) was one of those early mornings for me.  Woke up at 5 am and took this to work.  After I got some work done and drank some black coffee I ate this around 7:30 am.  2 hardboiled eggs and a banana.  Super easy.

For lunch, both days — meat and salad.  What other suitable lunch is there?  There’s something about a simple salad that is perfect at work…satisfies your hunger w/o leaving you wishing you could get a nap after.  Ready to get back to work!

Grassfed patty on a bed of spring mix with cucumbers, bell peppers, tomatoes, a few slices of avocado and a drizzle of olive oil with balsamic vinegar.

Day 4 Lunch – super simple again.  Yup, salad again…I know, don’t hate me because I am boring.  I do have a life ya know!

Day 4 Lunch – pork ribeye on top of spring mix with cucumbers, carrots, olive oil and balsamic vinegar.

Alright so dinner…it gets a little more interesting, but hardly!  For night #3 I basically had the exact same thing as I had for lunch.  I got home at like 10:15 pm and was starving; hence, no picture.  Just imagine lunch all over again.

Now as for tonight’s dinner — definitely more exciting!  I will say, I’m super poor right now ya’ll…so you’re going to see lots-o beef patties for a while.  No steak dinners in our household for at least another week!  Did I mention that I got a bill from my recent doctor’s appointment?…I owe $500 bucks!  Ahhh, and I’m not even unhealthy!  THIS right here people is why I eat healthy.  Every time I spend loads of money on top quality grassfed roasts and whatnot I tell myself, “you know what?…it is okay because while it is expensive now you are not going to spend the last 10-15 years of your life with a weekly doctor’s appointment.”

Bed of greens topped with a few drizzles of olive oil along with a beef patty and a fried egg. I love runny yolk on salad greens…is that weird? Served with a big serving of sweet potato fries.

And there you have it folks!  That is what I have eaten the last two days.  Boring as crap — I know.  I will try to be better, but I need money to do that soooo….. stay tuned.  🙂

Loving my Whole 30 by the way!  Yeah!!

    The pork ribeye sounds good as well as the meat pattie with egg on it.

      Yeah those pork ribeyes are no joke. They are super cheap so Jason buys them all the time and cooks ’em real good.

    How do you cook your pork rib eye so it is tender and not dried out? The ones I bought this week are at least 1″ thick. How about a good marinade?

      Yeah, the ones we buy are usually really thick as well. Most of the time we do them on the grill. This last time we did them under the broiler for about 6 minutes a side then tent with foil to let ’em sit and cook a little more. The secret is not being afraid for pork to still be just a tad pink in the middle…it’s perfectly fine!

      If you want them super moist you can marinate them in a few tablespoons of butter with spices like cumin, cinnamon, chili powder, salt and pepper.

      My favorite rub for pork is:

      -1 tbsp. paprika
      -1/2 tbsp. salt
      -1/2 tbsp. black pepper
      -2 tsp. rubbed sage
      -1 tsp. dry mustard
      -1/2 tsp. onion powder
      -1 tsp. ground cumin
      -1 tsp. coriander
      -1/4 tsp. ground ginger
      -1/4 tsp. cinnamon

      Sounds like a lot of spices, but this rub will knock your socks off.
