Blueberry Pancakes

Well typically I would throw this post under the Treats category, but we’re having Blueberry Pancakes for dinner.  As I mentioned in my previous post — going Paleo doesn’t mean you have to give up all of your favorite classic comfort foods.  If you’re working out like crazy or if you don’t have that healthy of a gut in the beginning you might not want to gorge on things like this…but it’s nice to know the option is there.  These little cakes are still better for you than pancakes made with white or wheat flour…that I am sure of.

Today is a great day for comfort food anyway — even though Jason and I have a mini vacation coming up it has been kinda stressful getting ready for it.  We are driving to Dallas Saturday in order to catch our plane super early Sunday morning…and that means we need to make sure our vehicle is in tip-top shape for the trip.  We need tires.  They’re pretty bad.  I wouldn’t feel comfortable driving to Dallas on these tires at all.  We went to three different used tire shops this afternoon and none of them had the particular size that are on my jeep.  I didn’t realize that my jeep had odd-ball sized tires on it?  Uhhhh….whatever.  Needless to say, it looks like we’re going to have to drop a small load of cash just to get us to the airport…before the trip even freakin’ starts!  That’s annoying.  So….do I need blueberry pancakes tonight?  Umm, yes.  I do.

There are lots of Paleo-approved pancake recipes.  You have a few options — you can find pancakes made with almond meal or coconut flour.  I prepare mine with coconut flour because I use it in place of almond meal anywhere I can for baked goods.  Almond meal has some great qualities, but if you’re really trying to lean out it can be problematic.  Eating nuts in excess can be a bad thing.  This recipe is my go-to pancake recipe and I use it as a base for any special pancakes I might do.  Depending on what you top your pancakes with you can have these regularly and not even consider them a treat.  They’re so good you can get away with not topping them at all and just eating them warm.  Occasionally I put 1 tbsp of honey in the batter, but you can totally leave it out.  I did tonight.  The blueberries give just enough sweetness and you can feel really good about eating them.

 

Ingredients

**This recipe yields 10-12 pancakes.

  • 6 eggs
  • 3/4 c. coconut flour
  • 1/2 tbsp. baking soda
  • 2 tsp. ground cinnamon
  • 2 tsp. vanilla extract
  • 1 can of coconut milk, 14 oz.
  • 1 c. fresh blueberries
  • coconut oil for cooking

 

Process

  1. Begin by beating your eggs with a hand mixer in a large bowl.  Beat them until very frothy.  (This helps your pancakes become nice and fluffy!)
  2. Add all other ingredients to the bowl and continue mixing until well blended.
  3. Heat a skillet over medium heat and add some coconut oil.  Using a 1/4 sized cup scoop some batter onto the hot skillet.  Cook about 3 minutes until you see little air bubbles popping on top and the cake can lift easily with a spatula.  I will add that these pancakes are better when you make them on the smaller side.  If you go to large you’ll be hovered over the stove forever!  The second side usually takes a little less time.  You also may need to add additonal coconut oil if you notice any sticking.

Top your pancakes with all sorts of goodies like amond butter, honey, coconut sap, coconut butter, pastured butter, or just eat them plain.  However you like to do it you won’t be sorry.  We are splitting this recipe 3 ways so I am making some fried eggs and bacon to go on the side.  Hell yes!!

    I tried to make this and failed miserably. Apparently I picked up finely shredded baking coconut instead of coconut flour. (The first item here: http://www.edwardandsons.com/ldo_shop_coconut.itml ) I ended up with a very eggy runny mess 🙁
    I’ll have to try it again!

    Oh noooo!!! That’s no fun at all. Do you order your products online or were you just pointing out which item you used? I use Let’s Do Organic brand as well, and I really like it. Definitely give them another shot; you’ll love ’em.

    I was just pointing out which product I used. I haven’t had to order anything online with Market Street, Sprouts and all these other stores nearby 🙂
