Weekly Menu 4/21 – 4/28

I love menu planning day.  I actually look forward to it!  Usually as the week goes on I look at my favorite blogs, read magazines, thumb through old cookbooks and I come up with things that I want to try.  If recipes are not paleo, then I make them work according to our standards.  The beauty of eating a paleo lifestyle; however, is that you stick to real whole food so finding recipes that will work is so easy.  Most recipes you find already have that down, then it’s just a matter of omitting or substituting.  The main reason I enjoy menu planning day though is it gets me excited for the week ahead.  Sometimes when you are following a strict set of rules or “watching what you eat” so to speak it can get overwhelming and grow really monotonous.  Planning out my week gets me excited because I have things to look forward to, new things to try, new pictures to take, new posts to share with all of you, and that’s what keeps me going.  Sounds silly huh?  Hey, well whatever works.  Speaking of exciting things to share with you — I picked up my pasture-raised veal order at the Brazos Valley Farmer’s Market this morning!  Check out what I got!

Pictured above is my veal osso bucco, liver, roast, and calf heart.  I won’t be making any of these items this week — still moving through my last order of beef.  First come, first eat basis!  This veal was of course purchased from the folks at Wild Type Ranch and the calves that this veal came from were pasture-raised and fed off of their fresh green grasses as well as the milk produced by their grass-fed mamas.  While I was there I picked up a beef summer sausage, and a dozen of their pastured eggs.

You know that eggs are fresh when they come in different colors 🙂  Did you know that the color of the egg simply reflects the color of the hen?  White hens lay white eggs, and brown hens lay brown eggs.  That’s all.  A lot of people think the brown ones are better for you, or something.  Actually if you can see the one in the upper left corner it’s not even bright white…it’s more of a gray color.  That’s natural!  The eggs you buy from the store and bleached and made to look as bright white as possible to make them more attractive to consumers.  So silly.

Hope you are looking forward to what we will be preparing this week…nothin’ too special, but our meals are always fantastic.  They’re made with lots of love and they are wholesome.  Haha, gag!  No, really…try some of them out, and if you do…let me know!  I would love for people to share their experiences with me.

Tuesday:  Bacon-wrapped Pork Skewers with Chimichurri Sauce

Wednesday:  Moroccan-Rubbed Lamb Steaks with Cinnamon Parsnips

Thursday:  Curry Meatballs over Cauliflower Rice

Friday:  Crockpot 7-Bone Roast with Salad

Saturday:  Balsamic and Rosemary Chicken Salad
