Weekly Menu 3/26 – 3/30

This week’s menu is shorter than usual.  First off, we decided very last minute to grill by the pool today so my seafood dinner will have to serve us for lunch tomorrow.  No problem there.  Also, I work my weekly menu around days off and pay days — so next Friday is pay day!  That means that I will go for another round of stuff on next Saturday.  That is why this weekly menu doesn’t cover a full week.  Have no fear though – while it may be short it is not lacking at all in content!  I have some really exciting things, and some regulars.  In case you haven’t noticed, we don’t usually eat the same thing twice.  I have a few one-skillet type meals that I’ll make for quick lunches and I swear by them because they’re that good…but typically I really enjoy making new things.  Eating a Paleo diet is never ever boring, but coming up with new dishes on a weekly basis is just what I do.  It keeps me interested and excited and that helps.  We don’t eat things out of boxes or bags, or even cans for the most part so if I were to make the same things over and over again that would just be boring.  If I am going to go out of my way to slave in the kitchen; if I am going to make everything from scratch and be forced to run my dishwasher multiple times a day then I am damn well going to make it worth it.  I don’t joke around with food!  This stuff is not comparable to Hamburger Helper, and it beats the you know what out of fast food or any boxed meal you could fathom.  Wholesome food rules.

Also, this weekly menu is a bit special because my good friend will be visiting me and I wanted to cook some awesome stuff for her.  That is actually a day that will be a repeat; I just have to make my Spinach & Sweet Potato Salad for her.  I know that she’s a big fan of sweet potatoes and I think she will really enjoy it.  Also, I learned that she has never tried lamb before!  I must change that; I have to be the one to introduce her to the wonderful world of lamb.  So of course you’ll see some of our weekly lamb included as well; although, I don’t think it is a recipe that I have posted on here before.  So you’re in for a treat!  Multiple treats as a matter of fact!  In addition, to the regular dinners you will see some breakfast plans as well.  That reason is two-fold.  First off, breakfast is my favorite meal of the day…especially for experimental cooking.  Secondly, since I am on vacation this week I will have mornings where I can spend more time making something versus our quick bacon and eggs at 5 am.  Jason will still be getting up at 5 am — I have no clue what he’s going to do.  I plan to sleep in, so that fool is on his own.  Well, actually I know exactly what will take place.  He will get up at the last minute, not eat breakfast, and instead wait till he’s fully awake at work and he’ll eat like 3 Lara Bars.  Easy fix!  Mmmmm the bed will be so cozy for me…sucks for you Jason!

Monday (Breakfast):  Turnip, Asparagus & Mushroom Hash

Monday (Lunch):  Chopped Yellow-Fin Tuna Salad with Avocado and Bacon

Monday (Dinner):  Dutch Oven Chicken with Green Bean & Blood Orange Salad

Tuesday (Breakfast):  not sure what this will be yet, likely some sort of one-skillet bake with swiss chard

Tuesday:  Spicy Cinnamon Lamb Blade Steaks with Spinach & Sweet Potato Salad

Wednesday:  Pumpkin Cashew Curry over Sticky Coconut Cauliflower Rice

Thursday:  Broiled Round Steak with Blackberry Marinade and Coconut-Toasted Brussels Sprouts

Friday:  Prosciutto & Asparagus Paleo Pizza alongside Homemade Tomato Basil Soup
