Stuffed Avocado for Breakfast

It’s plain to see — I am a planner.  Some people don’t deal well with that, but I make things happen.  I don’t see details; I see the big picture and plan accordingly.  The only problem with that is on occasion things pop up that are not easily worked around and then I get a little tense.  Originally I had planned to make a pretty amazing breakfast this morning for Jason’s sister, Tanya.  She was coming into town from Dallas; however, those plans changed — not that anything was her fault.  Due to unforseeable circumstances she wasn’t able to make it 🙁  Well, that’s no excuse for a lousy breakfast!  This idea came up in a conversation with my friend Iris, yesterday.  And this breakfast is for her!  Hopefully it passes the drool test.

Ingredients

  • 1 avocado, split in half and pit removed
  • 2 eggs
  • 1 bacon strip, cut in half (use more if you want extra on the side, like me)
  • salt and pepper to taste
  • garlic powder
  • smoked paprika

Process

  1. Preheat oven to 425 degrees.
  2. Fry your bacon strips over medium heat until browned, but not completely crispy.
  3. Press half a bacon strip into the hole of each avocado half.
  4. Crack an egg over each hole slowly so that the egg white spreads out and the yolk rests in the depression.
  5. Sprinkle with whatever seasonings you like — my everyday favorites for everything are the ones mentioned above.
  6. Bake in the oven for 10-15 minutes, or until the egg whites are set and yolks still a bit runny.
  7. Devour!  I ate both halves, but I don’t count calories, and neither should you 😉

**Let me share another idea I had while doing this.  I think next time I will scrape out some of the avocado to create a bigger hole that will accomodate more goodies.  You can stuff it with some ground breakfast sausage, maybe some green chilies or something, go ahead and do the egg thing and then use the remaining avocado you scraped out to make a sort of whipped topping.  You can combine the avocado with some olive oil, lemon juice, and some spices in a food processor and drizzle it over the egg???  Hmmmm???  Yeah, I may try that next time.  In fact, I like the idea so much it’s a damn near certainty.
