Sausage & Spaghetti Squash Bake

So many things…don’t know where to start!  Well, good news or bad news first?  Only one bout of bad news — that is, I did indeed get some sort of “sickness.”  Aye…it happened in the middle of the night.  Sure enough.  Woke up and stopped up city — both nostrils 100% blocked, sweaty neck, sore muscles and headache supreme.  Hah, I made that sound like a pizza!  Yeah, so I guess I’ll face the obvious.  Germs are germs and healthy people get sick, too.  It shouldn’t be the case, but I guess especially when you touch money all day long you’re bound to pick up some bad things.  Yeah, that’s right…I’m mad rich.  Not really; I work in retail.  But that’s my day job — by night I am a DAMN FOOL ON THESE FOUR BURNERS, and quite the blogger as you’ve come to find out.  Hah.  So on to all the good news!?  Go ahead…click away…you gotta see what’s up.  It’s not like you have anything better to do; I know because you’re already here which says a lot about you.

Okay, so good news …oh crap-ola, wait, there’s more bad news.  I almost forgot.  So because of this sickness, there has been a minor setback in my workout routine.  It’s got me all worked up and questioning my entire existence and asking Jason, “am I gaining weight this weeeeeeeekkkkkk!?”  I am not right in the head.  In fact, his exact response to me was, “you’re crazy, woman!”  No, I know that’s not what it means…it’s just that when you’re used to working out almost daily and then all the sudden you’re not up for it things just get weird.  Oddly enough, I have been hungry as a hippo.  You’d think without working out I would have all this built up energy and not need to eat a lot?…wrong.  Don’t know why.  Life is just not on my side on that one.  I’m eating the shit out of stuff (no, not physically picking shit out of actual food)…it’s just a phrase.  For instance, tonight after seconds at dinner I had an apple with almond butter on it and I NEVER do that.  Not saying there’s anything wrong with a little apple…it’s just that I usually fill up with dinner and I’m fine not giving into that whole “need something sweet” after eating problem.  It’s the principal!  I try super duper hard at it, and I even scowl at Jason when he does it.  I give him horrible glares and sigh really loud on purpose from across the room just to show my disdain and jealousy that he’s a male and has all this testosterone…so much to the point that he can eat the hell out of fruit, anything really, and as long as he puts some sort of effort out each day he has more muscle than anything else.  I like to tell him he has a lot of testosteroni and that it’s the San Francisco treat.  Hah.  Lucky bastard.  Is that word allowed in the blog world?…we’ll let it slide this time since I’m sorta new.  Thanks.

As for the long awaited good news!  We received our large order of grassfed beef today!!!  The original plan was that I was supposed to pick it up from the Brazos Valley Farmer’s Market tomorrow morning.  However, Sarah – the woman behind Wild Type Ranch, is fighting off a cold (ahhh, another healthy sick person just like me-self) so they will not be able to make an appearance.  She called to let me know her hubby (who had a bad-A Australian accent) would be making a delivery to Village Foods this morning and that I was more than welcome to meet him there.  “Oooh no, I’m at work Sarah!” I said.  Anyway…I realized, duh…I’m the boss…I can send someone to go pick it up!  So, we got the total payment amount and got straight up cash monies from the register.  Not as stealing – as cash back haha.  Other assocaites heard us discussing meeting someone in a parking lot with this cash, and they must have thought there was some sort of drug deal going on!  So we let them think that.  But nope, it was for BEEF.  Turns out we got 30+ lbs of meat, and the coolest thing is that she (the wonderful Sarah) threw in a beef heart for me!  So cool.  Suddenly my nostrils cleared up, my aches went away and I was happy as a clam.  That’s not to say my cold is over — I just mean that getting this order was so fun for me.

So I HAVE to go down the list again — of all the things we received.  Sorry, I have to.

  • 1 Seven Bone Roast
  • 1 Round Steak
  • 1 Beef Heart
  • 1 Brisket
  • 4 Hamburger Patties
  • 1 pkg Beef Cutlets
  • 1 pkg Stew Meat
  • 2 Top Sirloin Steaks
  • 4 Beef Shanks (yes, with beautiful marrow bones)
  • 1 Sirloin Roast
  • 5 pkgs of Ground Beef

Alright more good news — I have this weekend off from work, Jason’s sister is coming to town, we’re having sweeeeeets, and I am seriously thinking about taking a whole week long vacation (next week or the last of March) to do absolutely nothing!!!  Dang, no work, and a freezer full of endless possibilities…that’s the life for me.

You’ve waited long enough.  I’m really proud of you.  You must really want this recipe.  You should!!  It was amazing!!!!!

Ingredients

  • 1 medium sized spaghetti squash
  • 1 bunch of kale greens
  • 1 lb. Italian sausage
  • 4 strips of un-cured bacon, diced
  • 1 red onion, thinly sliced
  • 1 egg
  • 1/3 c. chicken broth
  • 1/2 c. coconut milk
  • 3 garlic cloves, minced
  • 1 tbsp. garlic powder
  • 1 tsp. tarragon
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. rubbed sage
  • a few tbsp. almond meal

Process

  1. Preheat your oven to 400 degrees.
  2. Cut your spaghetti squash in half lenthwise and scoop out all seeds and excess threads.
  3. Place cut side down, and bake for about 30 minutes.  It is done when you feel the skin give in a little bit when you press it.  By the way, if you are unfamiliar with spaghetti squash — you need to familiarize yourself.  Not only does it taste great, but it’s a super low carb option and I nice addition to a lot of recipes.  Also, the coolest part is that if you’re trying to go lower carb but you’re a pasta lover…it is called a spaghetti squash because it’s flesh looks just like spaghetti noodles when scooped out!!
  4. While your squash bakes, heat up a large pot under medium-high heat.  Add bacon and cook until crispy.
  5. Remove bacon, leaving the grease behind and start cooking your sausage – cook until browned.
  6. Remove sausage and place in same bowl with bacon (leaving all grease behind in pot.)
  7. Add minced garlic, onions, kale, and chicken broth.  Combine.
  8. Add coconut milk and all spices.  Mix well, cover, and let simmer for about 5 minutes.
  9. Once spaghetti squash is done, use a fork in a down-scraping motion to release “noodles.”
  10. By this time your kale should be wilted and your onions translucent.  Combine squash along with kale mixture in a 9 x 13 glass dish.
  11. Add egg, mix thoroughly.
  12. Add sausage and bacon and stir to combine.
  13. Bake in oven for 20 minutes.
  14. Take out of oven and sprinkle top with almond meal — didn’t measure exactly, just enough to give it a little crust at the top.
  15. Place back in oven under your broiler for about 5 more minutes to brown top.
  16. Enjoy!
