New Year’s Day & Weekly Menu

I have not posted a weekly menu in a long time!  I still make menus for us before I shop for groceries, but they have been sporadic for a very long time.  I had a steady routine down, but honestly ever since my promotion I have been in a completely different state of mind.  My schedule really has changed, and free time is not as available as it used to be.  My cooking has become extremely simple (which isn’t a bad thing), but some nights have included some not-so great choices…especially during the holidays.

Alas, all things must come to an end!  We will still be enjoying some paleofied sweets New Year’s Day…but that will be the last go!  It has been difficult with this newfound KitchenAid mixer of mine — I am telling you; I did NOT have any other option but to bake my butt off.  …and that’s exactly what I have done.  Yikes!

Here’s just a sampling of my shame.  By the way — there were also chocolate chip cookies that I did not get a picture of, and the snickerdoodles featured below were made TWICE.  Yup, they are that good.  Thank you very much, Urban Poser, for the most fantastic snickerdoodles I have ever eaten.

All of these paleo people are evil.  I love them for the wonderful dessert recipes they come up with, and I hate them for the very same reason at the very same time.

Now, here is my weekly menu (which includes our plans for New Year’s Day.)  I am having a week long menu with recipes that I love from various websites/books I adore.  Feel free to make them right along with me!

Sunday:  Chili with cornbread (cornbread recipe courtesy of Comfy Belly.)

Monday – New Year’s Eve:  Mustard-Glazed Chicken Thighs with Green Beans. (Chicken thighs courtesy of Balanced Bites — Practical Paleo.)

Tuesday – New Year’s Day:  BBQ Pulled Pork, recipe from the Food Lover’s Kitchen.  Southern Style Collard Greens, from Everyday Paleo and Coconut Cake for dessert – also courtesy of The Food Lover’s Kitchen.

Wednesday:  Lamb stew meat — I’ll just throw it on some mixed greens with some olive oil and lemon.  done.

Thursday:  Salmon Patties from Diane Sanfilippo’s Practical Paleo along with some salad greens.  These salmon patties are outstanding, by the way…I make them every week for something quick.

Friday:  Pollo Con Salsa Roja from Sarah Fragoso’s Everyday Paleo.

Saturday:  Chorizo Meatballs over Mashed Cauliflower, another one of my favorites from Pratical Paleo.

Not too bad of a menu eh?  These are all great recipes that I fall back on often.  Busy life!  Come to think of it — I should have thrown in more recipes that called for fruit because before too long I am going to be completing a sugar detox.  I actually can’t wait.  :)  The holidays have made me feel pretty lousy.  Anyone else ready for a new year and fresh new start?

    OK, I’m trying those salmon patties! They’ve been tempting me since Practical Paleo showed up on my doorstep. And I agree 100% about that snickerdoodle recipe – they’re amazing!

      Haha! Samantha, the salmon patties (oddly enough) were actually the very first thing I made from the book! You won’t regret it; they’re awesome. :) Happy New Year to you!
