Braised Beef Short Ribs

Well, another day off and it was a wonderful one.  I have really enjoyed my days off lately because after years and years and years of working I finally came to the realization that you’re not supposed to do anything on those days.  In the past I have done endless loads of laundry, cleaned all day long…I would even go shopping just to feel like I was doing something with my day off.  Hell, not anymore!  I like to sit on my butt and listen to music, play online, sleep in…holy moly…I was missing out.  Today was exceptionally good because my crockpot did all the work on dinner, and after I worked out I just took it easy.  I did end up going to the store for two, well three, very important things.

 

Item #1 – Liquid Smoke
Tomorrow is grass-fed brisket day and it’s going to be a party.  I get excited about food and my mom showed me love with food, so shut up.  Yeah, but the liquid smoke — I needed it for my brisket, man you can fake anything now days — from the comfort of my own home I can pretend I have a smoker like my Grandpa used to have…ahhhh that brings back memories.  My dad once built two awesome smokers, welded them on his own and everything…and I can’t tell you what all we came up with to smoke.  Hams, turkeys, chickens, briskets…hell…no wonder I’m a meat lover and I can feel mom’s love now.

 

Item #2 – Fish Oil
Absolutely necessary.  Let’s give you a quick crash course on fish oil.  Fish oil contains EPA & DHA which are polyunsaturated Omega-3 fatty acids.  Your body needs these, but you can’t produce them on your own – you get it from the food you eat.  The problem is that foods don’t contain these essential fatty acids anymore, well not the ones most people eat.  If you’re eating a Paleo diet you have a much better chance of getting these as they are found in a lot of things we eat, such as wild-caught fish.  But who can honestly say they eat enough fish?  Most foods, especially in conventional diets, are much higher in Omega-6’s which are necessary too, but they should not outweigh the amount of Omega-3’s you’re getting.  Anyone who is eating regular grain-lot fed meat, along with farm-raised fish (if you even eat fish), along with processed food like grains and the like you are getting way too many Omega-6’s.  I assure you this is the case.  I choose to supplement with fish oil because it insures that I am getting a good amount.  EPA & DHA are anti-inflammatory agents (which is a BIG DEAL), and they help with brain health, heart health, protection from diseases like cancer and improve your hair and skin conditions.  If that weren’t enough — because they are anti-inflammatory they aid in relieving muscle soreness after workouts,  help promote a lean body mass, boost your metabolism and improve your body’s fat burning capabilities.  Yeah, really.  So anyway, look into it, especially if you’re eating a lot of Omega-6 rich foods — your body will say, “thank you.”

 

Item #3 – Room Darkening Curtains
Random?  Not really…it’s something I have wanted and planned to get for a very long time.  I am looking to create an artificial night.  🙂  Well, not really…but I need my room to be DARK.  It’s not dark enough.  Do you know that there is a statistic that getting a poor night’s sleep (whether it be not enough or bad quality) is just as detremental to your body as being a 2-pk a day smoker?  Yup.  I believe it.  Sleep is incredibly under-appreciated, and GOOD sleep is even more forgotten about.  Your body is not dumb…you can sense light through your eye lids lol…you need your room to be PITCH BLACK to actually get the sleep your body deserves.  You know those silly eye covers that you would see women wearing in old movies?…the ones they refer to as needing in order to get their beauty sleep!  There’s a reason!  Your body, especially if your active, needs ample time to do what it needs to do to replenish and repair itself.  Give yourself that time.  Think of it like this — have you ever noticed when you have a cold and you spend the entire day in bed versus going on with your day how much more quickly your cold goes away?  Or better yet, if you’ve ever had any surgery…the difference in how you feel over a night’s sleep is imense.  I am just saying that A LOT transpires through out a night’s sleep — so this should be the case every night.  Random story — I slept with the blanket over my head last night trying to make it as dark as possible and I had the most amazing dreams.  One of them was far too real — there were brown snakes everywhere!  No, not the ones you find in the toilet…real snakes!  Yeah, that’s a bad example…haha, go get a curtin so you can have really scary nightmares!  Go!  Do it!

Those were the three super important things I picked up at the store today.  If you are still reading this post you are a true champ, and deserve this recipe.

 

Ingredients

  • ~3 lbs. of grass-fed beef short ribs
  • 4 strips of bacon, crumbled
  • 1-2 tbsp. bacon grease (from cooked bacon)
  • 3/4 c. beef stock
  • 8 cloves garlic, smashed
  • 2 tbsp. paprika
  • 1 tsp. chili powder
  • salt and pepper to taste

 

Your short ribs will be full of Omega-3’s if they come from pasture-raised cattle. These ribs are from the wonderful folks at Wild Type Ranch – a local ranch that I get all of my grass-fed beef from.

Process

  1. Cook bacon strips in skillet over medium heat.
  2. Remove bacon and set aside on paper towel to drain — keep grease in pan.
  3. Cut ribs up – I had four sections of two ribs each.  Salt and pepper each side to your liking.
  4. Turn heat up to medium-high and sear ribs on all sides, around 2 minutes a side.
  5. Transfer ribs to crockpot and season with spices (I mixed them all up together and then distributed over meat)
  6. Add crushed garlic cloves on top of meat and pour beef broth over everything.
  7. Cook on low for 7-8 hours.
  8. Enjoy!
