This dish only became chicken chili after I tasted it. I truly had no plan… all I knew was that I had to work all darn day and needed something to eat when I got home. I had thawed out some chicken…and then what… Sometimes those throw together type recipes are the ones that turn out the best! After being fully satisfied, and great reviews from Jason I realized — this baby has got to be shared!
I have not been blogging very much lately, although Jason and I have been eating surprisingly well! How have the holidays been effecting your lifestyle?
With the holidays around – it is so easy to fall off the wagon. I wrote a post before that talked about the ups and downs of your diet, and how the seasonal fluctuations are actually a really good thing for you! I just love that kind of stuff. Here is the way I see it: There is a time for discipline, and then there is a time for just doing whatever you want — being a bit more intuitive so to speak. The key for me is truly keeping a balance. I tend to lean a little more towards the discipline type side, but that is solely from my type-A personality that drills extreme guilt into my brain if I veer off too much. It has taken me a very long time to understand that being too strict is actually my fall back. Stress is a huge player in the diet & hormone regulation game. Sometimes I wonder how food affects my body if there is guilt or stress involved. In other words, if I eat something that is not typical of my lifestyle and I worry or stress about it – I feel like the emotions that are involved are actually more bothersome to my health than the bad food itself. In retrospect, I feel that eating something badly should be swallowed with feelings of content. You chose to do it. Now just move on. That can take some REAL practice to do.
Take home message? Just take care of yourself. Don’t beat yourself up over things, eat what you want to…and just keep yourself in check. Make sure that more times than not you are choosing things that your body wants. You’ve only gone one, and it’s all your’s.
What are my thoughts? I say splurge a little this holiday season — eat a bit more dried fruits, throw some white potatoes in with a roast! Put on 5 pounds or so…who cares!!?? I bet your body likes you being fatter anyway. Then when you feel like you’re tired of the splurging…move on and do what you have to do with dedication and diligence. That is the natural and seasonal ebb and flow, my friends.
Oh yeah, my slow cooked chicken chili! I almost forgot…guess I had a lot on my mind. Enjoy.
- 2 chicken breasts
- 1 yellow onion, chopped
- 1 jalapeno pepper, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz.) of diced tomatoes (Mexican style is best and read your ingredient label)
- 1 can (4 oz.) of diced green chiles
- 3 c. chicken stock
- 1/2 c. coconut milk
- 1 tsp. salt
- 1/2 tbsp. cumin
- 1 tbsp. dried oregano
- fresh cilantro
- Combine onion, jalapeno, garlic, tomatoes, green chiles, stock, coconut milk, and all spices in your slow cooker.
- Drop in chicken breasts – yes, put ‘em in raw. They should be completely covered by liquid.
- Let cook for 8-9 hours on low.
- Once you are ready to eat, use two forks to shred the chicken while it is in the slow cooker.
- Garnish your bowl of soup with fresh cilantro and some cubed avocado.
Not much in the ingredient list, but believe me a little goes a long way with this one.
