Whole30 Day 16

Good Lord…today has been full of amazing food.  Currently I am watching episode after episode of Mad Men on Netflix, but I will take a quick break to recap on Day 16.  This Whole30 is absolutely a piece of cake — except of course, there’s no cake.  I gotta tell you — I am a firm believer that you don’t need cake when there is badass meat around.  It is funny really — I have always wondered what people change up when they decide to complete a Whole30.  I think by this time we have all come to a clear understanding that paleo eating is not a diet…it is truly a lifestyle change.  It is a committment to your body — one that ensures you will put health first.  So when you make the switch from your “regular eating” to a Whole30 — what kind of changes do you make?

For me, I take out the treats.  My eating habits are not different…my lunches are salads at work with some sort of meat on top — that’s always the same.  My breakfasts almost always have good quality bacon and some raw kraut….the only difference is I knock out the dark chocolate after dinner or I don’t satisfy Jason’s desperate wishes for paleo-ified chocolate chip cookies.  Other than that…it’s always about good quality food in my book.

Have I thought about those wonderful chocolate chip cookies?  Pfft…uhh, yeah.  But what’s so nice about squeeky clean eating?… I love how great my stomach feels!  That’s only one of the many perks of very clean eating.

Now on to Day 16!

Woke up at 6 am for work — Jason was such a dear!  He woke up early with me so we could try out our new french press together.  Oooh man it was some good coffee…just so clean and crisp.  Loooooved it.  We each had a cup, black but of course (that’s always the best way) and I made myself some breakfast.  Three bacon strips, two fried eggs, and a little side of fermented beets.  ….off to work!

Next meal I ate was lunch, 7 hours later…1 pm.  Yesterday I made a huge batch of chicken to eat on for lunches throughout the week.  I used a Practical Paleo recipe for Mustard Glazed Chicken Thighs except I used chicken legs.  They were absolutely flavorful…big salad of greens, cucumbers, carrots, red onion, olive oil and balsamic vinegar.

I did not work out today because, well, I just darn didn’t feel like it that’s why.  Work has been so tough lately…just being on my feet all day long is enough sometimes.

When I got home from work I immediately started on dinner.  I was super excited about this one…yet another recipe from Practical Paleo.  In case you haven’t noticed I am not giving any particulars about these recipes.  So far each one has tasted amazing, and my photos are decent enough…but you’ll have to buy the book yourself to get all the goods.  Dinner was Cumin-spiced Pork Tenderloin with Root Vegetables…first of all I absolutely adore cumin, and the parsnips were just so great.  They were roasted to perfection — just a little bit browned and covered with all the good bacon-fat flavors from the pork.  Like I said before, who freakin’ needs cake?

I was pretty full, but of course the night-time-watching-the-tube hunger struck.  I reached for some apple slices sprinkled with cinnamon and a scoop of almond butter.  Divine.

Is it wrong to look forward to eating the next day?  I do, I look forward to breakfast.  Call me crazy, but I think Day 17 may be a great one!
